Mojito Shrimp with Pineapple Transatlantic Menu
Our new transatlantic menus offer a taste of home and a taste of adventure. In order to enhance your experience on our flights between the U.S. and Europe, new menus are offered in First Class as well as Business Class.

The new menus incorporate appetizers, salads, entrees and desserts that reflect distinctively European and American tastes. You can already find the new menus featuring menu items created from European ingredients and recipes on flights from Europe to the United States. U.S. flights bound for Europe feature typically American cuisine.

Scallops
American Menu
When we develop new entrees, we turn to our Chefs' Conclave, a group of internationally acclaimed chefs, for inspiration. Chef Stephan Pyles, Chef Dean Fearing and Chef Nancy Brussat provide us with valuable direction, as do our flight attendants and customers.

Based on this feedback, we created new items for our Premium Class customers to savor inflight. Appetizers include citrus-marinated scallops, coppa ham with mozzarella, and shrimp marinated in mojito sauce served with pineapple and Boston watercress with zucchini, mushroom and yellow bell peppers. Entrees include cowboy steak with red chili dusted onions and corn-bean ragout, lamb shank with an ale tomato sauce and chicken Madeira. Seasonal vegetables such as grilled yellow squash, sautéed spinach, sun-dried tomatoes and artichoke bottoms with chive-whipped potatoes accompany the main dishes. Customers are encouraged to end their meal with a signature ice cream sundae or fruit and cheese.

European Menu
We invited European chefs to express their vision for an inflight culinary tour de force by submitting proposals for the new menu for U.S.-bound flights. From these imaginative offerings, we selected premier appetizers, salads, main courses and desserts with Continental flair.

Prior to the main meal, enjoy appetizers including apple soy marinated beef served with horseradish cream and thin potatoes, portobello mushroom carpaccio and smoked sesame salmon with sweet chili cucumber. Main courses include seared fillet of beef with porcini mushroom butter and bordelaise sauce, roasted chicken with eggplant confit with goat cheese and red pepper cappelletti pasta, to name a few. For dessert, customers may enjoy a signature ice cream sundae or a fruit and cheese plate.

Flights to Central America and the Dominican Republic

Effective March 1, 2009, American will extend its in-flight food-for-sale program to the economy cabin on flights to Central American countries and the Dominican Republic in lieu of the existing complimentary menu service.

Peanut Allergy — American recognizes that some passengers are allergic to peanuts. Although we do not serve peanuts, we do serve other nut products and there may be trace elements of unspecified peanut ingredients, including peanut oils, in meals and snacks. We make no provisions to be peanut-free. Additionally, other customers may bring peanuts on board. Therefore, we cannot guarantee customers will not be exposed to peanuts during flight and strongly encourage customers to take all necessary medical precautions to prepare for the possibility of exposure.
